Winemaking: Methode Champenoise. Pinot: Pressed to tank immediately. Racked for clarification next day to tank. Cold fermented in stainless steel (60 degrees F) for 10 days, then racked to stainless steel barrels. Aged undisturbed for 4 months. Chard: Also pressed to tank immediately. When racked, we pulled off a neutral puncheon (132 gallon barrel), to ferment separately. This warmer, more oxygen rich fermentation style brings richness, volume, and a tropicality to the base wine. Aged in barrel until blended with the Pinot before bottles on 1/18/24.

Notes: Aroma: Fresh, bright fuit. Flavor: crisp and lean but opens into a rich textured experience throught to the finish. Subtle red fruits and spice dance with the tropical nature of the Chard. This bubble will age gracefully for 5-10 years, but we don't think it'll last that long in our cellars!
