Winemaking: Harvested at 19.2 brix, destemmed into fermentors, and fermented on the skins for 7 days. Pressed into tank to complete fermentation, then transferred to stainless steel drums and aged for 4 months. The cuvee was tirage bottled (with yeast for carbonation) and left to age on the yeast for 28 months using the Methode Champenoise.
