Winemaking: Stabulation is the process of keeping all the juice from the press, meaning goop/sediment etc... for a period of three days. We keep the goop in suspension by adding dry ice. This agitates the tank and creates the "reverse boil" of dry ice in liquid that helps enhance the aroma and flavor of the wine. What we end up with is more varietal character, more fruity notes and all around a pretty cool expression of Sauvignon Blanc. This technique is employed in highly aromatic whites and roses across the globe, however this is the first time we were able to pull it off.

Notes: Aromas of passionfruit, orange, guava and grass. Bright citrus and tropical fruit on the palate. Texture is broad on entry, with a crisp bright clean finish. Enjoy this bad boy on a hot summer day, with sushi, or as a general starter wine for the evening!
