Winemaking: Cold fermenation for 14 days, pressed directly to barrel and then aged on the lees.

Notes: Elegant and ethereal, this Pinot will age for some time. It shows subtle spice and elegant fruit. Delicate, perfect for a white wine replacement that does not dominate. This wine is more of a complement and an easy drinker than an aggressive attention seeker.

2021 Black Darter

Wine: 2021 Black Darter, Central Coast

Rhone Red Blend: 35% Grenache, 35% Mourvedre, 30% Carignan

Vineyard: Hook Vineyard, SLH (Grenache); Barr Vineyard, Paso Robles (Mourvedre); Circle B Vineyard, Paso Robles (Carignan)

Barrel Program: New puncheon (Grenache); Neutral barrels (Mourvedre and Carignan)

Winemaking: All wines were made on their own as a single varietals. Then barrels were selected from each wine to create a harmony of oak, spice, and cohesive flavors.

Finished wine: 13.5%

Notes: Black Darter is an attempt to emulate the complexities of a southern Rhone blend that are common in that region. The goal is to marry the wines together to accentuate the positive and strongest attributes of each wine without losing the sense of the wine inself. Raspberry/guava candy (Grenache) is met with a blueberry umami (Mourvedre) and a tight, crunchy finish that keeps the palate fresh (Carignan).

2020 Grenache - Machado

Vineyard: Machado Creek Vineyard, Santa Clara Valley

Barrel Program: 42% New French Oak Puncheon and 5-60 gallon neutral oak barrels

Winemaking: 45% whole cluster fermentation (very good, strong fermentation). 85 degrees is the warmest it got.

Notes: Delightful aromas of candied orange peels, pink peppercorn spice, and guava tea! The palate presents with rich flavors of cherry and raspberry spice, showcasing a lovely structure.

2022 Good Stuff Man!

Varietal: 20% Grenache, 30% Syrah, 26% Mourvedre, 14% Cinsault

Vintage: 2022

Vineyards: Grenache (Hook Vineyard, SLH); Syrah (Hook Vineyard, SLH); Mourvedre (Paso Robles); Cinsault (Paso Robles)

Barrel Program: Fermanted in stainless steel and aged for 5 months in neutral French oak.

Cases Produced: 180

Winemaking: In an attempt to accentuate and lift up the best attributes of each wine, we selected barrels from each wine that we thought would play well together to create a lovely, textured red wine blend. Making the sum of the parts greater than the individual pieces. These barrels were blended together and left to age for 4 additional months before bottling.

Finished pH: 3.75

Notes: Aromas of blackberry jam and blood orange are layered with hints of toasty, sweet barbecue spices. On the palate, it drinks like rough silk (velvety smooth yet textured) with firm back tannins from the Cinsault. Complex and vibrant, this crunchy wine pairs well with grilled meats, earthy flavors, or even richer seafood like salmon!

Winemaking: Daily gentle punch downs during cold soak, fermentation and maceration lasted for 14 days before pressing to barrel. 100% destemmed.

Notes: Juicy, fresh strawberries with a hint of woodsy vanilla from the oak. This wine is smooth and enjoyable now, but if cellared, the bright fruit will mellow, allowing the herbs and spices to emerge, making it a perfect match for food.

Notes: Aromatics of white flowers, crushed earth, cinnamon, niçoise olive, subtle brine to those olives! Notes of concentrated black currant, orange oil, delicate tannins, and a bright pop of acidity on the palate. Finishes clean, long,and bright!

2020 Malbec ET

Winemaking: The grapes were fully destemmed and underwent fermantation in small batches for two weeks. After pressing directly into barrels, the wine aged for 18 months, followed by an additional 40 months in the bottle.

Finished pH: 3.8

Finished alcohol: 13.3%

Notes: The oak contributes spice andn complexity to the wine, culminating in a toasty, rich finish with an abundance of Olallieberry notes present in the mid-palate. Hungarian oak tends to be more assertive than French oak, allowing its characteristics to shine through. It took 3 years in the bottle for the oak to mellow and integrate, and now the wine is harmonious, with the fruit beautifully balanced against the oak. This was an exciting experiment, as we typically use 30% new oak, whereas this wine features 100% new oak!

2021 Petite Sirah

Winemaking: Gently destemmed, pumped over first 1/3 of fermentation. 14 days in the fermentor and pressed when the tannins have just begun to soften and coat the whole mouth.

Notes: Boysenberry, root beer, peachy aromatics. Dense chewy tannins, fruit is expressive yet tamed by the dark brooding nature of this varietal. Pretty little spice and long textured finish. This is our work horse, every day red wine that pleases with every sip.
