Notes: This wine presents a spicy aroma and flavor profile, featuring peachy stone fruit with crisp acidity, balanced by rounded fruit characteristics. This unique profile results from the later, more mature harvest of the grapes. The year 2023 was marked by cold, wet conditions, leading to delayed maturation; thus, sparkling wine was the ideal choice for this vintage, as our typical table wine ripeness was not achievable. The outcome is a delightful and playful representation of our Estate Viognier.

Winemaking: Foot trot and left on the skins for 6 hours to extract color and flavor. Pressed gently to a temperature controlled stainless steel tank. Cold fermented in that tank. Aged in bottle for 28 months on the yeast.

Notes: Armoas of fresh cut strawberries and citrus. Followed by notes of crunchy, crisp stone fruits like plums and peaches, with subtle notes of brioche toast to finish. This wine is great as a starter course with cheese, a trip to the beach, or your couch!
